When we first got the sheet music for this piece we did a double take -- 11/8 time signature? Yep. But as you listen to it you'll understand how well that works with egg beaters and deviled eggs; it fits quite naturally! One of the benefits to the 11/8 time signature is there are frequent lead hand changes so players will get the opportunity to develop their hands equally. Another benefit is it really requires you to think about how your feet line up with the overall 2-bar grouping of 22/8. Don't stress though, start slow and try a few different ways to break down the measures and you'll be good. Mamma always said, "Ya gotta break some eggs if ya want some Egg Casserole!"
